Sizzling Summer BBQ: Secrets from our Head Chef’s BBQ favourites.

As the grill master at Woodford Dolmen Hotel, I’m excited to share the sizzling summer secrets straight from our kitchen. When the sun is high and the air is warm, there’s nothing quite like the aroma of smoky BBQ going through the air. Get ready to fire up your grills and impress your guests with these three finger-licking BBQ recipes that are sure to make your summer gatherings extra special.

Grilled Lemon & Herb Chicken Skewers

Ingredients:

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into cubes
  • Zest and juice of 1 lemon
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 1 tablespoon of fresh thyme leaves, chopped
  • 1 tablespoon of fresh rosemary leaves, chopped
  • Salt and pepper to taste

Instructions:

  1. In a bowl, mix the lemon zest, lemon juice, olive oil, minced garlic, thyme, and rosemary.
  2. Add the chicken cubes to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes (or up to 4 hours) to let the flavors mingle.
  3. Preheat your grill to medium-high heat. Thread the marinated chicken onto skewers.
  4. Grill the skewers for about 8-10 minutes, turning occasionally, until the chicken is cooked through and has a beautiful charred appearance.
  5. Sprinkle with a pinch of salt and pepper before serving. These tender and zesty chicken skewers are sure to be a hit!

Grilled Corn on the Cob with Chili Lime Butter

Ingredients:

  • 4 fresh corn cobs, husked
  • 4 tablespoons (1/2 stick) of unsalted butter, softened
  • Zest and juice of 1 lime
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of paprika
  • Salt to taste

Instructions:

  1. Preheat your grill to medium heat.
  2. In a small bowl, mix the softened butter, lime zest, lime juice, chili powder, paprika, and a pinch of salt until well combined.
  3. Place each corn cob on a sheet of aluminium foil. Spread the chili lime butter generously over each corn cob.
  4. Wrap the corn cobs securely in the foil.
  5. Grill the corn cobs for about 15-20 minutes, turning occasionally, until the corn is tender and slightly charred.
  6. Unwrap the corn cobs and serve them hot with an extra dollop of chili lime butter on top. Trust me, this tangy and spicy twist will make your taste buds dance!

BBQ Bacon Cheeseburgers

Ingredients:

 

  • 1 lb (450g) ground beef (80% lean)
  • 4 hamburger buns
  • 8 slices of cooked bacon
  • 4 slices of cheddar cheese
  • BBQ sauce
  • Salt and pepper to taste

Instructions:

  1. Preheat your grill to medium-high heat.
  2. Divide the ground beef into four equal portions and shape them into burger patties. Season each patty with salt and pepper.
  3. Grill the burgers for about 4-5 minutes per side, or until they reach your desired level of doneness.
  4. During the last few minutes of grilling, place a slice of cheddar cheese on each burger and let it melt.
  5. Toast the hamburger buns on the grill for a minute or two until lightly browned.
  6. Assemble the burgers by placing a grilled beef patty on the bottom half of each bun.
  7. Top each patty with two slices of bacon, and a drizzle of BBQ sauce.
  8. Add the top half of the bun, and your BBQ  Bacon Cheeseburgers are ready to be devoured!
