Our Executive Head Chef Laurence Richards began his career at the prestigious London eaterie Brown’s Hotel, where he quickly moved up the ranks from commis chef to chef gardmanger while training Jamie Oliver, who also started his career there.

He then moved to the London’s United Oxford and Cambridge Gentlemen’s Club, where he held the position of sous chef, where he “cooked for Royalty and the English gentry”. After this he spent time working in Canada’s finest Steak House, Hy’s Steak House, where he perfected the art of cooking the perfect steak.

In Ireland, he has worked in the Hilton Hotel Dublin, the Talbot Hotel and the Tulfarris Hotel & Golf Resort before moving to the Woodford Dolmen and bringing his expert knowledge of American, French and British Cuisine.

Coolanowle Organic Farm

All our beef burgers, black pudding and sausages are supplied form Coolanowle Organic Farm, an award winning organic farm located in Arles, Co. Laois, 5km from the hotel.

Rapeseed Oil

Natures Oil – local company based in Castledermot. Rapeseed is a healthier alternative to traditional cooking oils.

Allergy Information

All our soups, sauces & gravies are all Gluten free and coeliac friendly. Our dessert ice-creams are also gluten free.

Allergen information is clearly stated on all our menu's.

We are an allergy aware premises, we understand the needs of the allergic customer and we operate a food safety management system with trained staff to control major food allergens and other foods which our customers may wish to avoid. Our Allergen Data Sheets state the allergen content of each item which can be purchased, however some of our menu items contain nuts, peanuts, seeds and other allergens or ingredients which are available in our kitchens and while may not be included as an ingredient on your desired dish may cross-contaminate by use of the common area that they occupy. Please speak with a member of staff if you wish to make a suitable choice and we encourage those customers who have allergies to make themselves known to our serving staff.
