In this month’s Carlow Up Close blog we are going to take a look at two fantastic local whiskey and gin suppliers in County Carlow who we are delighted to serve in the Dolmen bar. Silver Spear Gin and Walsh Whiskey have become worldwide award-winning brands.
At our recent Staff Summer Barbecue, we were thrilled to have Walsh Whiskey provide the staff with Writers Tears cocktails on arrival. Thank you to the two Walsh Whiskey brand ambassadors who gave us a great insight into Writers Tears and the many ways in which it can be served.
Writers’ Tears is a unique vatting of Aged Single Pot Still and Single Malt whiskey. Distilled entirely from Pot Still and Malt, without Grain, this is a truly special Irish whiskey. Writers’ Tears is triple distilled, non-peated and matured and aged in American Oak bourbon casks. A gold Medal winner at the International Spirits Challenge in London and one of the highest rated Irish Whiskeys in Jim Murray’s Iconic “Whiskey Bible” “Altogether a very unusual Irish Whiskey, a throwback to the last century where spiced Pure Pot Still whiskey was married with Floral Single Malt” – Jim Murray. It has also been added to Ian Buxton’s publication “101 Whiskeys to try before you die”.
You can smell flashes of apple with hints of vanilla and honey over a distinctively pot still base. Taste is gently spiced with a burst of ginger and butterscotch with background notes of toasted oak with a long elegant finish with subtle notes of milk chocolate and almonds. We can see why Walsh Whiskey brands have become in so much demand and just can’t stop winning awards.
With Gin one of the most popular drinks of choice at the minute, Silver Spear Gin has fast become a front runner in the brand of choice. Silver Spear Gin, an award winning contemporary Irish Gin, is produced in small batches. Taking over fourteen months to develop and produced with absolute consistency, Silver Spear Gin is a marriage of thirteen different botanicals, including fresh juniper berries, spices, herbs and five types of citrus, maturing in bottle for up to eight weeks. It has pronounced notes of coriander and lime with undertone notes of juniper. Silver Spear Gin was awarded "Best Contemporary Gin" in Ireland at the World Gin Awards, 2018.
The flavor profile of Silver Spear is well-suited for today’s gin buyers and the bottle has great 'eye appeal.' We serve Silver Spear gin with strawberries and lime with a premium Indian tonic and lots of ice or alternatively serve neat over ice and a slice of lime. The brand Silver Spear is after John Henry Watson of Ballydarton House who won the spear in 1876 for skills in horsemanship.
